Sure, I just wish I could afford to go!

Does anyone with knowledge of how this operates know why Project Gipf games were dropped a few years back?

Lack of entries, lack of an organiser and or nobody at the meeting deciding games being fan.
The organisation when compiling a timetable have a certain number of slots and choices have to be made!
Many really good games never got a shot at returning because of a bad slot or a bad year for entries.
Enough willing competitors, arbiters and available equipment and I'm confident that gipf would return!
